Recipe of the Week · Week 7
Grandma's Goal Line Garlic Butter Steak Bites
Cast iron
About 25 minutes
Ingredients
- · 1½ lbs sirloin or ribeye, cut into 1-inch bites
- · 1 tsp salt
- · ½ tsp black pepper
- · 1 tbsp oil
- · 4 tbsp butter
- · 4 garlic cloves, minced
- · 1 tbsp Worcestershire sauce
- · 1 tbsp chopped parsley
- · Pinch of red pepper flakes (optional)
Directions
- 1. Pat the steak dry and season with salt and pepper.
- 2. Heat a cast iron skillet on high until it's smoking hot. Add the oil, then the steak in a single layer. Don't crowd the pan.
- 3. Sear 2–3 minutes without moving, flip, and sear 1–2 more minutes for medium. Pull the steak to a plate.
- 4. Drop the heat to medium. Add the butter and garlic. Cook 30 seconds until fragrant.
- 5. Stir in the Worcestershire and parsley. Pour that butter over the steak bites. Serve hot over rice or mashed potatoes.
Common mistake
If the pan isn't hot enough, the meat steams gray instead of browning.
Why it matters
The hard sear locks in juice, and the garlic butter is the whole play.
